Our General Manager

  • Five minutes with Chris Hill.
  • What are your hopes for 2010?
I am hoping that the economic outlook will improve and on a lighter note that England win the World Cup and Manchester United become champions of Europe again!

I nearly forgot...I get married this year so I’m looking forward to the start of married life.

  • What do you think the reality will be?
Unfortunately I believe with a combination of VAT returning to its previous level, unemployment exceeding 3 million, the General Election and taxes forecast to increase, 2010 will be a challenging time for all households.

Oh…and England probably won’t win the world cup!

  • What good things are there happening in your area this year ?
The Ryder Cup at the Celtic Manor takes place at the end of September. We anticipate the Aztec Hotel being very busy due to the fact that we are the nearest hotel over the bridge in England!

  • Where would you most like to holiday this year and why?
Nicola and myself are planning our honeymoon in Italy in May starting off in Venice and winding our way down through Rome and finishing off on the Almalfi Coast, Perfect!

Italy just oozes history; style and the most perfect laidback lifestyle…we can’t wait.

  • Who would invite to a cosy supper for 4 at your hotel?

President Clinton, President Obama ,Margaret Thatcher and Mickael Gorbochov.

I am inspired by people who have great work ethic, vision, determination and a “yes we can” attitude to changing and improving things.

  • Which celebrity Chef do you most admire and why?

I have an aversion against the title celebrity chef due to the fact that if they are on TV too much they are obviously not in their kitchens!

Marcus Waring is probably my first choice chef, as an example of someone who has moved through the ranks combined with the focus on classic cookery technique and great menu delivery.
